Honey Cake


  • 225g unsalted butter
  • 250g honey 
  • 100g muscovdar sugar 
  • 300g self raising flour
  • 3 large eggs


1) Preheat the oven to 160c / 140c fan assisted or Gas Mark 3.

2) Oil and flour a 20cm cake tin.

3) Melt the butter, honey and sugar in a pan slowly over a medium heat. Once the mixture has melted, turn up the heat and boil for 1 minute. Leave the mixture to cool for approx  15 - 20 minutes.

4) Beat the eggs into the cooled honey mixture. 

5) Sift the flour in a bowl and pour the honey and egg mixture into the flour and beat until you have a smooth batter.

6) Pour the batter into the prepared cake tin an bake in the oven for 50 - 55 minutes until a skewer pushed into the centre of the cake comes out clean.  

7) Leave to cool slightly and turn onto a wire rack.

8) Enjoy with a nice cuppa or a warm honey and lemon.
